Ingredients -
1 teaspoon olive oil
1/2 cup red bell pepper
1/4 cup frozen corn
1/4 cup black beans
2 ounces of diced cooked chicken
Ground cumin, chili powder and garlic powder to taste
(desired toppings)
Heat olive oil in a medium skillet over medium heat. Saute pepper, corn, and black beans. Cook chicken and season with salt, pepper, ground cumin, chili powder and garlic powder to taste. Add the chicken to your veggie skillet. Spoon chicken mixture over 1/2 cup cooked brown rice and top with salsa and shredded Monterey Jack. (if desired)
