Cream Cheese Chicken Pockets

Ingredients -

2 tbsp olive oil
2-3 small chicken breasts, diced
1/2 cup minced onion
2 cloves garlic, minced
1/4 teaspoon kosher salt
1/8 teaspoon ground black pepper
1 tablespoon butter, softened
3 ounces cream cheese, softened
1/4 teaspoon seasoned salt
2 tablespoons milk
1 (8 ounce) package refrigerated crescent rolls
1 tablespoon butter, melted
1/4 cup Italian seasoned bread crumbs, optional

Instructions -

Preheat oven to 375 degrees F.

Heat the olive oil in a large skillet over medium heat. Cook the chicken with the onions and garlic.

Meanwhile, in a medium bowl, beat the cream cheese and 1 tablespoon softened butter until smooth. Stir in the cooked chicken, onions and garlic. Add the salts, pepper and milk. Mix well.

Separate the crescent roll dough into the eight triangles. Dollop a tablespoon of filling into the center of each triangle and fold the corners up to seal. Press and seal firmly. Place on ungreased baking sheet or stone and repeat with the remaining dough and filling. Brush the tops with the melted butter and sprinkle with the bread crumbs (optional).

Bake for 11 – 13 minutes, or until golden brown.

Recipe Note: To heat up leftovers, bake in a preheated 350 degree F oven for 10 minutes.

Hello Spring!

Spring has sprung here in Illinois. We took Stella out for her first walk. She loved it! :)

Praise Baby

This morning Stella was really fussy while I was getting ready for church, so I turned on some worship music and she became calm instantly. I believe she already has a spirit of worship even at 7 weeks. I played this music while she was in a the womb and I play it now, because I want her to be surrounded by God's love. I don't think it's ever too early to start exposing your children to the power of God. I believe she will be part of a mighty movement in her generation and it all starts with a seed that her daddy and I plant within her. For us, worship music is the seed. I want her to have a heart that longs to praise her king. I know the enemy will try to attack us along our journey of raising up a mighty woman of God, but he can bring it on, because our God is greater. My life changed when I had a baby. My goal in life is no longer about earthly things, but about raising my daughter to be madly in love with her creator. I LOVE Sunday morning worship, because I strap her in the sling and we worship together from the stage. Her daddy is the worship leader, I sing back up and she is right there in the middle of it all. I love it!!

Here I am, leading worship with my girl. :)

Bridal Shower Towel Cake

This was my Pinterest-inspired bridal shower gift! I am a stickler when it comes to gifts. I don't want to get people just any gift. I like gifts that require a lot of thought and love, especially this one, because it was for a dear friend of mine.

This towel cake consists of:
10 dish rags, 1 kitchen towel, 1 big measuring cups, a set of measuring cup and spoons, kitchen timer, spatula, cookie mix, 2 rubber hot pads and an oven mitt all put together on a set of 4 plates. :) Super easy to make and really cute!

(I rolled each dish rag and tied each one with a rubben band around the middle. I took the measuring cup and placed it in the center (it's what holds all the items in the middle of the cake), I then wrapped the kitchen towel around it to secure all the dish rag rolls, then I began placing each item stratigically into the center measuring cup. There's no absolute way to do this, it's pretty much just moving things around until you get it to look the way you want it to. I used a set of 4 plastic plates as my base and I secured everything down with tape and ribbon. It was a really easy project!

80's themed bridal shower

When it comes to parties I love themes! (as you can tell) So I was super excited when I got invited to my good friend's bridal shower and saw that it was 80's themed. I can't take credit for any of this, because I had nothing to do with planning it, but I have to share it with you because it's an adorable idea! We had a blast!

Here I am with Stella all dressed in our neon colors ready for the party!

(And a close up)

Now check out the décor...

(Yes, those are Pac Man cookies below!)

All of the guests wore 80's attire...

The bride's future name made with records :)

The games we played were 80's themed as well. We had a game where we were given quotes from 80's movies and we had to match them with the correct movie. It was harder than I thought it'd be! And of course there was 80's music being played while we were standing around snacking. One thing you could do is have a prize for best dressed to encourage your guests to dress up. We didn't have any problems with that, as you can tell. ;)

Grocery Bag Holder

I am not a lover of clutter what so ever, so grocery bags were instant trash for me...that is until I realized how often I needed them and never had them on hand. So, to solve this dilemma I created a bag holder. I took an old peanut container, spray painted it black and with some scrapbooking magic, I created this -

So now I have grocery bags on hand when I need one and they're not cluttering up my house. It's a win win. :)

Move over June Cleaver

I am a very determined person. Sometimes too determined. I've lived in the mindset where I have to be like June Cleaver or I'm a total failure at life. I wanted to be the woman that always has a clean house, dinner on the table for her husband, always looks like she could be on the cover of a magazine and still has time to play with the kids. Reality hit me hard in the face this morning when I woke up two hours later than I planned, missed praise and worship practice, barely made it to church. My hair was half dried and my baby wasn't fed. I had to feed her during worship just to make sure we made it on time. 10 o'clock right on the dot. That's when we arrived. Which is late for me. I am not a 'get-there-right-on-time' kind of person. I like being prepared. I felt an extreme amount of guilt from the pressure I so often put on myself to be perfect. I know, I know.....there's no such thing as "perfect", but whatever is the closest thing to being perfect....that's what I want to be. Then I realize that I am this girl's mother. It's no easy task doing what I do. Even if my hair is frizzy, my house is a mess and there's chaos all over....I'm still the one person this girl wants at the end of the day. I'm still needed. I'm still important to her. She doesn't notice if I'm not perfect, because to her, I'm all she needs. When I look at my baby girl it makes me realize that there's room for flaws. I don't want her growing up thinking that it's not ok to mess up. I'd love to have all my ducks in a row all of the time, but there are just some days when crap happens and you have to roll with the punches. That's another part of being a mom. I'm learning as I go that the 'perfect' mom is just a mom that loves her kids and puts their needs before her own. At the end of the day, that's the important thing.
