Slow Cooker Sausage and Veggies

 




Ingredients -
 
5-6 chicken or turkey sausage links
1-2 medium potatoes
a few stalks of celery
carrots
cauliflower
(the amount of veggies really doesn't matter - it's up to you. If you have onion, bell pepper, ect. use it. This is a great recipe for getting rid of those veggies in the fridge that need to be eaten.)
2 cups chicken broth
1/3 cup of white wine (optional)
 
Directions -
 
Cut all the veggies into 2-inch chunks
Layer into crock pot (most to least dense)
Add slice sausage
Add broth and wine
Cover and cook on low for 8 hours or high for 4.

Swimming!

 
Stella is loving the kiddie pool we bought for her. She can touch the bottom of the pool when she's sitting in her floaty and she takes off. It's hilarious seeing her dart around the pool like a little duckling. haha. Love summer days with my favorite girl!

Sleeping in the Crib

Last night was our first night with Stella sleeping in her crib. She was sleeping in a bed beside ours, but she has out grown it. I cried a little when we put her to bed, I'll admit, but it actually wasn't as hard as I thought it'd be. I think I get emotional with each milestone we face, because it's shocking to me how fast time is flying!

Biscuit Egg Casserole



Ingredients -
1 can of buttermilk biscuits (8 count)- (I used open nature biscuits as pictured but have also used Pillsbury Grands Biscuits)
1 pound of any breakfast sausage roll (browned, drained, and cooled)
1 cup shredded mozzarella cheese
1 cup of shredded cheddar cheese
5 eggs, beaten
2 egg whites
3/4 cup milk
1/4 teaspoon salt
1/8 teaspoon black pepper
 
Directions - Preheat oven to 425 °F. Crumble and cook sausage in s skillet over medium heat until browned. Drain. Line bottom of greased 8 x 8 inch baking dish with biscuit dough, firmly pressing perforations to seal.
 
Sprinkle with sausage and cheese. Whisk together eggs, milk, salt and pepper in a medium bowl until blended; pour over sausage and cheese.

 

Bake 30 minutes or until set (A knife should come out clean when inserted in the center). Let stand for 5 minutes before cutting into squares; serve warm. Enjoy!
 *To Avoid burning or excessive browning on top of casserole, cover with foil for for half of cooking time (first 15 minutes)**

Festive Fruit

So you have a 4th of July cookout to go to, but you don't have a lot of time to cook something? If you're anything like me, store bought cookies and a bag of chips just won't cut it. I like bringing something festive and fun when I'm invited to a cookout or gathering. This dish is both festive and easy.
 

 
Just slice up your bananas and watermelon (you can also use strawberries instead of watermelon if you prefer) and line them in rows around the blue berries. I used about 5 or 6 bananas, a plastic container of blue berries and about a third of watermelon to make it. Enjoy!

Paper Organizer

If your house is anything like mine, cards, letters and random papers get stashed on top of the microwave and the next thing I know, the corner of my kitchen looks like a rat's nest. So I find this very handy to have on my fridge. It keeps the clutter under control.


What you'll need is a cereal box, scrapbooking paper, hot glue gun, magnets and embellishments. (I chose a flower)

Cut the top off of the cereal box and cut the front off at an angle. Cover with scrapbooking paper, place on whatever embelishment you want and hot glue magnets to the back.

Now, keep in mind that this is supposed to keep things organized-NOT become a catch all for papers. I make a point to go through the papers I stash in here at least once a week.
